Edit Gaia Tree

Hi, do you allow to edit Gaia tree and grass? If yes - could you tell me please what the way to looking for editing prefabs using maya/blender? Or would be another way to make my own trees and grass?

You can use any program you would like. 
You would need to drag the FBX out / export it. 
Then adjust it, mind you, you probably will have to adjust the shaders if you do this. 
Blender would work or you can find replacements on the Unity Asset Store. 

You would just need to make your own biome. 
I would recommend taking a look at the preset biomes to understand how we create our biomes.
