Reverting back: If for some reason you want to revert back all you need to do is go back to the Gaia Manager and select revert. If you do this objects may look weird, you will have to go to the materials of the object and correct the shader to standard.
What Render Pipeline Should I Use?
That really depends on you, and what you want to do with your project. You may stick with the default or URP is for the Mobile Developers, HDRP is for high end PC.
